A former Ishgardian Knight turned tavern owner, he brings discipline, strength, and a surprising gentleness to the bar. Known for his signature mixology skills, he can read a customer’s mood as easily as a drink order, crafting beverages that comfort, energize, or knock you on your ass, depending on what you need.When he’s not pouring the perfect pint or polishing glasses, he’s checking on the chocobos outside, offering a scratch under the beak like the softie he pretends he’s not. Loyal, hardworking, and deeply devoted to the people he loves, Ymir has turned this little western-styled bake shop and bar into a welcoming home for travelers, locals, and anyone in need of a warm drink and warmer company.Specialties:

A gifted baker from Kugane, she’s known for pastries so good they stop conversations, and smiles so warm they start new ones. Her two-toned eyes, one bright gold and one soft violet, have become a quiet icon of the tavern, greeting early-morning regulars and late-night wanderers alike.Nyx fills the space with comfort: the smell of fresh bread, the crackle of cooling pastries, and the soft hums she makes while she works. But beneath her gentle nature is a fiercely creative spirit—someone who builds recipes the same way she loves: with patience, passion, and a little bit of mischief.Specialties:

His Sharlayan precision blends beautifully with rustic Eorzean recipes, resulting in breads that are both comforting and refined.While he still carries the calm, scholarly air of his homeland, Kol has found joy in the warmth of the kitchen, the smell of roasted coffee, and the simple satisfaction of creating something meant to nourish others. No one at the Dirty Bird Bar & Bakery is ever quite sure which version of her will show up for the shift.Despite the chaos, her heart is usually in the right place… usually. Sometimes it’s a bit harder to find when she’s being cold, blunt, or brutally honest. Andi doesn’t sugarcoat things, which is ironic considering she works around pastries all day. If you ask her opinion, she will give it to you — whether you’re ready for it or not.Guests are advised to keep their fingers out of her workspace, avoid feeding her bread (it makes her cranky), and generally treat her like a slightly feral Coeurl. The staff has learned this the hard way. Still, beneath the sharp tongue and chaotic energy is someone fiercely loyal to her friends and the Dirty Bird family. Always ready to fill in a position if needed.And one more thing: do not disrespect her wine. That is the one rule she enforces without mercy.Specialties:

Effervescent, affectionate, and endlessly energetic, she’s the beating heart of The Dirty Bird Cafe, the kind of girl who can make friends with a rock, charm a grumpy patron into smiling, or convince half the tavern to join her in a late night hot tub outing after closing hours.A fresh faced AuRa full of joy, Mai adores her friends and supports their dreams with the devotion of someone who believes wholeheartedly in the people she loves. Whether she’s hyping Nyx’s newest pastry, arguing with Ymir over best wife, or dragging Y’sai and Serah into a beach day they definitely didn’t sign up for, Mai’s enthusiasm is contagious.She has a soft spot for games of chance, glittering drinks, and anything involving pools, beaches, or a party.
